Merge several text files into one

One Terminal line does it: cat joins files in the order given and > writes them into a new file. Use a wildcard to take every .txt in the folder, in name order.

How

Join every .txt in the folder into all.txt:

cat *.txt > all.txt

Or name them in the order you want:

cat intro.txt chapter1.txt chapter2.txt > book.txt

Write the result under a name that the wildcard does not match, or run it again and the file includes itself.
