Make an image black and white

Match it to the grey colour profile that ships with the system. sips does it in one line, and keeps the original if you give it --out.

How

Save a black-and-white copy:

sips -m "/System/Library/ColorSync/Profiles/Generic Gray Profile.icc" photo.jpg --out photo-bw.jpg

The colour is gone from the copy for good — keep the original.
